In this edition, WhistlePig has tapped into the techniques of the farmer distillers of old. To kick-start fermentation, they malted a small portion of their yearly rye harvest. The delicate heating process opens up the grain, allowing the yeasts easier access to the sugars.
This exceptional whiskey ages for 18 years in virgin oak barrels. On the nose, it's sweet and aromatic with notes of toasted oak, berries, and nutmeg. On the palate, it's elegant and spicy with mellow fruit and a pleasant floral quality. The finish is long, clean, and spice-driven.
