    The plot of land where this Pinot Noir grows began as a park-like space filled with flowers and fruit trees for the family to enjoy. In 1964 they tried their hand at planting Pinot Noir, realizing the plots outstanding terroir. After many years of tending the vines, the first vintage of "St. Hilaire," named for the patron saint of the church in Mareuil-sur-Aÿ, was born in 1995. This cuveé Blanc de Noirs is ample on the palate with citrus and candied pear notes complimented by a base of panettone.

    Billecart-Salmon

    In 1818, Nicolas François Billecart and Elisabeth Salmon tied the knot. Inspired by their shared passion for wine, they established Maison Billecart-Salmon in Mareuil-sur-Aÿ, their hometown. Shortly after that, Nicolas François partnered with Louis Salmon, Elisabeth's brother. Nicolas François managed the business operations, while Louis, an enology enthusiast, focused on crafting exceptional wines. To this day, the house is still family-owned and operated.
