The natural plum flavor of this sake comes from aodani plums, which are soaked in Tozai sake for over three months after harvest. The result is a highly fragrant, delicately sweet beverage characterized by notes of marzipan, apricot, and cherry on the nose, with a softly tart acidity that leads to a smooth finish. Pair on its own with glazed salmon, stone fruit desserts, or barbecue pulled pork. For a fun cocktail mix it with bourbon, lemon, and bitters, or add to seltzer water for a refreshing low ABV highball.
