Brewed in commemoration of the life of a "Brew Master Sensei" from the Noto Toji Guild, this sake has accrued a great deal of popularity in Japan for its traditonal panache. Texturally it is soft and rich while simultaneously maintaining a tight structure. Honeydew melon, cantaloupe, anise, jasmine, white pepper, and a slight earthy characteristic dominate the nose and palate. Drink alongside a honeyed goat cheese tart, tangy fall slaw, or tuna tartare.
