Ayala has had a long and storied past since the 1800’s. Once considered to be a favorite, they lost favor in the 1920’s when the Champagne world went sweet and they stayed dry. They've since made a comeback, but still remain a small, independent house. It's a classic champagne from a historic producer. This is a richer apple and strawberry style with toasty yeast on the back.
