Grapes from each plot of Pascal Cotat’s vineyards are 100% organic, hand harvested, and vinified separately to preserve the terroir of the wine. This Sancerre has aromas of melon, herbs, white flowers, and sea salt. On the palate it tastes of poached white fruit and grapefruit. Along with his cousin, Francois Cotat, he harvests late in the season to ensure a complexity and ageability that is otherwise hard to find.
