One of the winemaker’s goals here was to create a wine that harnessed the bright acidity and saline quality of Santorini. Therefore, the wine undergoes no malolactic fermentation, and is fermented in stainless steel tanks with organic yeasts. Living up to its name, Atma (the Greek word for soul), is bottling the essence of the island and giving you a wine that will pair well with grape leaves, goat cheese, or a fish in lemon sauce.
About The Varietal
As one of Greece's leading white grape varieties, Assyrtiko is most prominently recognized as the primary grape of Santorini, where it yields refreshing white wines closely linked to the volcanic character of the island.
Enjoy with spring vegetables, soft cheeses, or aromatic herbs and delicate spices.
