The vineyard itself (Vaudevey) has perfect south/southeast exposure between 650 & 720 feet in elevation, meaning the Chardonnay grapes have a perfect aspect for ripening. Just a kiss of barrel fermentation and oak aging give this Chablis excellent structure, with flavors offering up notions of green apple, wet rocks, lemon zest, and a long, saline, mineral-driven finish.
