Winemaker Theo Coles describes his wines as "pre-technology." They're made in a traditional way - grown organically and finished with minimal intervention. Most of the grapes in this wine are fermented in whole bunches, which imparts lots of flavor and nuance. Indigienous yeasts were used, and there's no fining or filtration. This is a very cool wine and indicative of what the best of natural wine can be.
