    "The 2019 País Salvaje was produced from vines that have grown wild and even up the trees. It fermented with full clusters and indigenous yeasts. It has contained ripeness in a warmer year, keeping the alcohol level at 12%. It has a nose of wild herbs and flowers (it's planted among the native vegetation) and full granite tannins. It fermented in concrete vats and was bottled after six months in concrete. This 2019 shows very good freshness and balance as well as the wild character of the place. 8,000 bottles produced. It was bottled unfiltered in October 2019." - The Wine Advocate

    Pais, known as Criolla Chica in Argentina and Mission in North America, is a historically significant red grape variety. It holds the distinction of being the first Vitis vinifera grape variety to be transported from the Old World (Spain) to the New World (Mexico) during the 16th Century. Despite its historical importance, it has often been considered a grape of lower quality.
