The old fashioned approach of these brewers can be detected in this sake's rustic style and larger format. However, that doesn't mean it should be overlooked! A high polishing rate and extremely flavorful rice variety result in a sake richly fruity and floral, with a bracing umami undercurrent and dry, somewhat savory finish.
