This Umbrian wine is made by Paolo Bea, an Italian winemaker known for making exceptional natural wines. Each wine is super limited, so be sure to grab any you see on the shelf! Pipperello is a hilly vineyard site with clay and gravelly soil. Fermentation takes 50-60 days, which then starts the multi-step aging process - a year in stainless steel, two years in oak, and an additional year of bottle aging. This wine is earthy with notes of cherry and plum, with a beautiful long finish.
