This wine is gets its unique character not only from this rare grape, but also from a process known as “fare le grane” or “adding the berries.” An initial fermentation over a period of 12 days is followed by the addition of slightly overripe whole grapes, spurring a SECOND fermentation.
About The Varietal
Ribolla is a white wine grape variety extensively grown in the northeastern Italian province of Friuli. It is also present in neighboring Slovenia, where it is referred to as Rebula.
